Split Pea Soup

2 c split peas

2 qt. water

1 large onion diced, or 1 T minced onion

4 medium potatoes, cubed

3 celery stalks, thinly sliced

2 c diced lean ham

1 1/2 tsp. salt

1/2 tsp. pepper

1/4 tsp. dried marjoram

1/4 tsp. dried thyme leaves

Place all ingredients in a large pot. Bring to a boil.

Reduce heat to low, and simmer 1 1/2 hours, or until peas

and potatoes are tender. Add additional salt and pepper,

as desired. Yield: 4-6 servings
