Oat pancakes with blueberry syrupOat Milk Pancakes

(dairy-free and soy-free recipe)

2 c whole wheat flour

1/2 tsp. salt

1 tsp. baking powder

1 tsp. baking soda

2 T sugar

1/4 c oil

2 eggs

2 c oat milk (double check label)

Combine dry ingredients in a bowl.  In a separate bowl, beat together oil, eggs, and oat milk.  Combine with dry ingredients.  Pour 1/4-1/3 c of batter over a hot griddle.  When edges appear dull in color and you see a few bubbles on top, flip pancake over and cook until golden brown.  Serve with favorite syrup of choice.  (For blueberry syrup recipe, see recipe archives.)
