Dairy-free Guitar Cake
My son wanted a guitar cake for his birthday, so here it is! (Unfortunately I’m not a professional cake decorator, however, it was a lot of fun making it for him!!!) Begin guitar cake by making 2 white cakes (see recipe below).
Basic Dairy-free White Cake Recipe (make 2 of these cakes for the guitar):
2 1/4 c white flour
1 2/3 c sugar
2/3 c shortening
1 1/4 c vanilla flavored rice milk
3 1/2 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
5 large egg whites
Pre-heat oven to 350° F. Grease bottom and sides of a 9×13 pan and lightly flour (to prevent sticking). In a large mixing bowl, beat together all ingredients except for the egg whites. Beat for 2 minutes on high. Add egg whites and beat on high an additional 2 minutes. Pour batter into 9×13 pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean. Allow to cool for 5 minutes, then turn pan upside down and remove bake onto a cooling rack. Frost as desired.
When cakes have cooled, cut into guitar pieces (see photo).
Frost with dairy-free buttercream frosting (see recipe below).
Dairy-free Buttercream Frosting
1 lb. confectioner’s sugar
1/2 c soft dairy-free margarine (I use Fleischmann’s Unsalted or Earth Balance)
1/8 tsp. salt
1 tsp. vanilla
3-4 T soymilk or rice milk
Cream 1/3 sugar with dairy-free margarine and salt in large bowl. Blend extract, 2 T soymilk and remaining sugar into mixture. Gradually stir in remaining soymilk or rice milk until frosting reaches desired consistency. (For chocolate frosting, add 1/4c cocoa powder. You can use food coloring to change the color, as desired.)
Once frosted, use extra cake pieces for frets. We used dairy-free chocolate chips and chocolate icing for the rest of the guitar pieces. Another idea for the strings is to use dry spaghetti noodles or licorice rope. You can be as creative as you want to with this cake. (For those who are really good at cake decorating, fondant would add an especially smooth layer and the possibilities would be left to your imagination.)
Note: Here is another darling cake idea that my friend made for me for my daughter (she could be a professional). It was delicious, and completely dairy-free!!! Keep your eyes open for dairy-free cake mixes at the store if you don’t want to bake them from scratch. The cake is Cinderella’s carriage (vanilla cake cooked in a soccer ball cake mold on top of a large chocolate cake). This feeds a crowd! My daughter LOVED it, and my kids were thrilled to have a professional looking cake that was dairy-free!
