Dairy-free Apple Streusel Muffins

2 c flour (1/2 white, 1/2 wheat OR all wheat)

1/3 c brown sugar

2 1/2 tsp. baking powder

1 tsp. cinnamon

1/4 tsp. salt

2 eggs

1 c rice milk, plain or vanilla (OR almond milk)

2 T canola oil

1 medium apple, peeled and shredded

2 T pecans, finely chopped

1 T flaxseeds (optional)

1 T brown sugar

1 T dairy-free margarine

Preheat oven to 375° F.  Line 12 muffin cups (or spray with non-stick cooking spray).  Set aside.  In a large mixing bowl, mix together flour, 1/3 c brown sugar, baking powder, cinnamon, and salt.  Make a well in the center of the mixture and add eggs, rice milk, and oil.  Slowly whisk together wet ingredients, adding dry ingredients to the mixture a little bit at at time.  When entire batter is mixed together, gently fold in the apples.  Spoon batter into muffin cups (1/3 c or so in each muffin cup).  In a small bowl, combine pecans, flaxseeds, and brown sugar.  Using a pastry blender, cut in dairy-free margarine until mixture crumbles.  Sprinkle evenly on top of the muffins.  Bake for 18-20 minutes or until a toothpick inserted comes out clean.  Cool on a wire rack for 5 minutes and then remove from muffin cups.  Yield:  12 Muffins.
