Chicken Penne Pesto, Dairy-free

With my husband being 1/4 Italian, I was searching for a way to make a yummy pesto dish without the Parmesan cheese for my allergy children.  Finally, I came up with one of my own.  It has been a family favorite ever since!

1 pkg. (14 1/2 oz.) penne pasta

3 boneless, skinless chicken breasts, diced and cooked, sprinkled with pepper and garlic salt

1/2 – 3/4 tsp. salt

1 tsp. sugar

2 tsp. corn starch

1/2 tsp. garlic powder

1 tsp. basil

1 tsp. parsley

1/2 c fresh spinach, finely chopped

1/4 c oil

3/4 c water

1/4 – 1/2 c pine nuts

Cook penne pasta according to package directions. While cooking, combine rest of ingredients, except chicken, in a medium saucepan. Bring to a boil. Reduce heat and cook for 1 min., stirring constantly. Set aside. Heat cooked chicken and pine nuts in a frying pan. When pasta is finished, combine drained pasta, pine nuts, chicken, and pesto sauce together in a large bowl. Serve warm. Yield: 6 – 8 servings
