Apple Oatmeal

Apple Oatmeal

2 cups vanilla soymilk or rice milk

2 T honey

1 T dairy-free margarine

¼ tsp salt

½ tsp cinnamon

1 cup dry old-fashioned oats

1 cup apples, peeled and chopped

1 cup pecans, chopped (or walnuts)

2 T brown sugar

Mix together all ingredients into a large pot.  Simmer on low until oats and apples are completely cooked, stirring frequently (about 5-10 minutes).  Serve warm with additional soymilk or rice milk.  Yield:  4-5 servings
